Healthy pancakes… two ways

20150812_192339_resizedI love pancakes, all types. Most people I know seem to prefer the French crepe. But me, I love the light fluffy American style. But I am not fussy, if someone will make me pancakes, I’ll take either any time. Spread mine with a thick layer of Nutella, sprinkled with some chopped nuts, a dollop of honey or a side of berries. Really the list of seriously tasty toppings is endless. Unfortunately neither of the above pancakes are in line with my recent food philosophy. Changing to a whole clean diet means waving goodbye to flour and sugar filled pancakes (unless I am actually in France or America, then an exception will be made!). Instead I have learned how to incorporate healthier versions into my diet.

The recipes below are much healthier alternatives to a traditional pancake batter. Traditional American batter is made using white flour, sugar and butter with baking powder to help them rise. These are wheat free and sugar free. The sweetness will come only from your toppings. Which will be natural sweetness, i.e. honey, agave nectar or maple syrup. Check this blog post on natural sweeteners for more info. These pancakes are made using whole clean ingredients. They are high in protein and healthy carbohydrates, so they will keep you full till lunch. Once you drag yourself away from the unhealthy versions you and the whole family will love these, especially if you let everyone pick their favourite toppings.

So this weekend if you haven’t tried a clean version of a pancake, get the kids involved and have some fun in the kitchen! The pinnacle of any Sunday morning is making a mess in the kitchen with some pancake flippin’.

There are so many recipes for clean pancakes, but these two are my favourite.

Recipe 1: Energy fuelled pancakes (one serving)

  • 2 eggs
  • Scoop whey protein (add another egg if you don’t use whey)
  • ½ banana
  • 15g oats
  • 1 tsp cinnamon
  • 1 tablespoon cottage cheese
  • Coconut oil for frying

Method

  1. Whisk eggs, whey, cottage cheese until well combined
  2. Stir in chopped banana, oats and cinnamon
  3. Heat coconut oil on medium heat
  4. Pour mixture into pan
  5. Fry for 1 – 2 minutes per side
  6. Leave in oven while the rest cook
  7. Top with anything and everything!!

Energy pancakes

Recipe 2: Chocolate Pancakes (one serving)

Ingredients

  • Scoop chocolate protein powder
  • 10g cocoa or raw cacao is better
  • 15g oats
  • 2 eggs
  • 100g Greek yoghurt (Fage)
  • Coconut oil for frying

Method

  1. Add all of the ingredients into a bowl and whisk together well
  2. Heat some coconut oil in a pan until hot
  3. Pour some of the mixture into frying pan
  4. Cook on each side for a couple of minutes
  5. Bubbles forming is a good indication pancake is cooked on one side
  6. Add the pancake to a plate and repeat for the rest of the mixture
  7. Serve your pancake stack with extra yoghurt, berries, maple syrup – whatever you love

My top toppings…

Berries, nuts, maple syrup, nut butter; from peanut to almond to cashew butter they are all delicious, nutella (if you must!), yogurt. Just be careful if you are on a weight loss journey, all these extra delicious topping are sure to increase your daily calorie intake, so be careful. For the kids, enjoy them all!!

protein pancakesTop tips. Be aware the consistency is totally different from a traditional pancake. These are more delicate as they are grain free. If you have not made clean pancakes before try recipe 1 as they are easier to manage in the pan. Also the recipes are adaptable, if you don’t have banana leave it out and add more oats. If you don’t have cottage cheese leave it out. I am all about making recipes work for me, so mess around with the recipe and enjoy.

OK update on trying them!! i missed the comment where you said try the first ones if you arent used to the pancakes and went straight to the second hahaha the first one bombed but the rest were perfect. i used a little egg frying pan so they couldnt spread too much anyway!!! i also was missing the cocao but very nice! think id try them with a square of the orange lindt choc Lisa had. that be nice to melt over them… damn it now I want them again. 😛
