Ferrero Energy Balls

Hi all,

Anyone fancy something nice this weekend, without the guilt? These are super tasty, filled with delicious healthy ingredients. I wasn’t planning on posting this recipe, because it is seriously simple. But they went down well, so I thought people might like to try them.

They literally take 5 minutes to make (faster than the time it would take you to drive to the shop to buy the biscuits).

 

Ingredients

200g medjool dates

1 cup of pecans

1 cup of hazelnuts

Maple syrup/honey

1tsp cacao

1 tbsp coconut oil

 

Method

 

  1. Pre heat the oven
  2. Place the nuts onto a baking sheet
  3. Squeeze some honey over them and roast at 180oC for approx. 20 minutes
  4. Then add all your ingredients listed above to a food processor
  5. Once blended and sticky simply roll into balls
  6. These will store for about 2 weeks (although mine didn’t last 2 days

 

These are so versatile. They will be great as a healthy weekend treat with a cup of coffee. Add into your kid’s lunchbox for a healthy snack. Use as a pre or post workout snack. All ingredients have nutritional benefits. The dates are high in fibre and natural sugars which are great for energy. The nuts a great source of healthy fats. The cacao acts as an antioxidant (helping to keep us looking young!)

Tips:

If you can’t find medjool dates just use regular. However the texture is not as good. To combat this, add dates to a bowl, pour some boiling water over and leave soak for about 10 minutes. Regular dates are also less expensive than medjool dates.

When using nuts in recipes, you should always pre roast them, this draws out the oils, making them more crunchy. However who has the time! If you don’t just put them straight into the food processor.

In most recipes maple syrup, honey, agarve nectar are all interchangeable, use what you have.

If you dont have raw cacao just use some cocoa or even drinking chocolate.

Instead of rolling into balls, flatten them into a square dish and make into bars.
